here are my beautiful pastries!
i've never really made pastry before, this one i used a premade rolled up one. i wasn't expecting it to puff up so much. next time i'm planning to distribute the filling more up to the edges, and maybe i won't fold it over like i did. i might try using red pesto or tomato paste, or a combination of both next time instead of the whole sundried tomatoes. next time i will also use spicy chorizo slices, or buy the actual sausages and dice it, instead of the nonspicy kind with added chilli oil. i definitely need to get myself some proper olive oil (maybe i'll try find some when i'm in sicily?) because the morrisons "extra virgin" one is flavourless. i think it would be nice if i added garlic and honey. i think i also may have forgotten to add herbs so i'll make sure to include that next time as well.
this is my "having guests over" pasta
yeah, so i usually make this pasta when i have people over for dinner because it's so quick and easy. this time i used bowtie pasta. i started off making it just with green pesto and kale, but the time before this me and my friend decided to add crushed peanuts and lao gan ma (chilli oil), so this time i just added those straight in and i think it worked really well. i want to start making more creamy pasta or sauces. a while ago i made spaghetti with a double cream, brie and gochujang sauce which was very good. maybe i'll do that next time. this isn't a very interesting dish so i don't have much to say about it.
this week i also made a sad attempt at vietnamese-style steak noodle salad but i didn't have most of the ingredients. typically it is cold rice vermicelli with nước chấm, mint and coriander, bean sprouts, cucumber, pickled carrot and daikon, red chilli, probably some others that i've forgotten, and then the steak is sliced and served on the top. my one was just steak, rice noodles, cucumber, mint, and then i also had it with lime juice and lao gan ma. i'm not gonna add a picture because i'm embarrassed.
fried salmon rice bowls
this weekend i'm staying with my mum, and this is what i made for dinner last night. i marinated the salmon (2 pieces) with 2tsp soy sauce, 1tsp fish sauce, and a little cornflour, and then i fried it (did the skin side last so it'd be crispy). the second bowl is the leftovers i had for breakfast (it was meant to be for my brother yesterday but i ate it because he ate the entire dinner i'd originally planned). when my mum makes cabbage she also crushes some hard boiled eggs and mixes it with fish sauce, and then tops the cabbage with that and it's really good. when i made it last night the egg would've taken longer than the salmon so i didn't bother, but i made some to eat with the leftovers this morning. i love salmon, i know eating fish isn't great for the environment and can be unhealthy, but it's SO GOOD.
